What To Do With Your Leftover Christmas Cake?

So Christmas is over for another year (sob).

Picture the scene. You’re more stuffed than a Christmas turkey, but you’ve still got half a Christmas cake to eat before it’s too late. You’re trying to force-feed encourage your family to finish it off, but those last few slices of delicious fruits and marzipan are still hanging around.

Binning it is NOT an option. Don’t panic, we have come to your rescue – read on for our two favourite leftover Christmas cake recipes.

Leftover Christmas Cake Recipes


1) Gluten Free Leftover Christmas Cake Snowmen Recipe

  • Preparation: 40 minutes (10 minutes per snowman)
  • Cooking time: none
  • Makes 4

Ingredients

For the buttercream

  • 10g softened unsalted butter or dairy free alternative
  • 25g icing sugar, sieved
  • 1/4 teaspoon milk or almond milk

To decorate:

  • 100g White ready to roll icing (for the body)
  • 50g Red ready to roll icing (for the scarf)
  • 50g Green ready to roll icing (for the hat)
  • 4 small pieces of raw carrot (for the nose)
  • 16 gluten/dairy free chocolate chips (for the eyes and buttons)
  • Gluten free chocolate strands or black icing pen (for the mouth)

Method

  1. First, make the buttercream by creaming the butter (or dairy free alternative) until light and fluffy, then adding the icing sugar and milk (or dairy free alternative)
  2. Crumble up the Christmas cake into a large bowl and add the buttercream
  3. Mix together until evenly blended then using the palm of your hands roll enough of the cake mixture to make four 2.5 cm balls (for the snowman’s body) and four 1.5 cm balls (for the snowman’s head)
  4. Place on a lined baking tray and chill in the fridge for at least 20 minutes
  5. When the cake balls are chilled, roll out your white icing and completely cover each ball
  6. Place the small ball on top of the big ball using a little water to hold in place
  7. To make a scarf, roll out your red icing and cut a long thin strip (around 10cm in length) and wrap around the snowman’s neck
  8. To make the base of the hat, roll out the green icing and cut a thin square 2.5cm width and length and place on the snowman’s head. For the top of the hat, cut another slightly thicker (around 0.5cm deep) green square 1.5 cm width and length and stick on top
  9. Use the chocolate chips to add the snowman’s eyes and buttons, carrot for the nose and chocolate strands for the mouth

2) Gluten Free Baileys Leftover Christmas Cake Trifles

  • Preparation: 5 minutes
  • Cooking time: none
  • Serves 4

Ingredients

  • 4 slices of Delicious Alchemy Gluten Free Christmas Cake crumbled
  • 4 tablespoons Baileys (plus extra for drizzling)
  • 5 meringue nests crumbled (including one for topping)
  • 4 tablespoons double cream
  • 12 tablespoons gluten free vanilla custard
Baileys Trifle 4 edit

Method

  1. Crumble the leftover Christmas cake and divide between four glasses
  2. Top each glass of Christmas cake with a tablespoon of baileys, followed by a layer of meringue and another layer of custard
  3. Mix the cream with the remaining baileys and drizzle 1 tablespoon over the custard
  4. Sprinkle the top with the remaining meringue
