Arancini balls – Makes 10

Perfect for serving on an Antipasti board with your favourite (dairy free) cheeses, olives, dips and breads, our Arancini Ball recipe is sure to be loved by all.

 

Ingredients

  • A knob of butter/dairy free alternative
  • 2 large eggs
  • 50g of Gluten Free flour
  • 100g of Gluten Free Breadcrumbs
  • 225g of Delicious Alchemy Rice Flakes
  • ½ Onion
  • 1 clove of garlic
  • 2 tsp of dried parsley
  • 3 tbsp of parmesan/ dairy free alternative
  • 100ml of white wine
  • 300ml of boiling water
  • 1 stock cube
  • Salt & pepper for extra flavour
  • Half a squeeze of lemon

Cooking Instructions

  1. Finely chop the onion and crush the garlic clove.
  2. Cook the onion and garlic on a low heat, until softened, with a knob of butter/dairy free alternative
  3. Mix the boiling water and stock cube together and add to the pan with the rice flakes
  4. Add parsley & white wine and cook on a medium heat for 3-5 minutes.
  5. Add the parmesan/dairy free alternative and the lemon juice.
  6. Season with salt and pepper for extra flavour.
  7. Leave the risotto to cool fully.
  8. Whisk 2 large eggs in a bowl.
  9. Roll risotto into 10 balls.
  10. Roll the balls in the gluten free flour.
  11. Roll the balls in the egg wash & in the gluten free breadcrumbs.
  12. Deep fat fry on a medium heat until golden brown & hot in the middle.
