Blogger Beth Heddle has created this delicious recipe for homemade granola which is fantastic to keep in the cupboard for breakfasts and impromptu snacking! For a vegan-friendly version, swap out honey for maple or date syrup.

Blogger Beth Heddle has created this delicious recipe for homemade granola which is fantastic to keep in the cupboard for breakfasts and impromptu snacking! For a vegan-friendly version, swap out honey for maple or date syrup.
150g mixed nuts
250g Delicious Alchemy Gluten & Dairy Free Oats
100g mixed seeds
120ml coconut oil
150ml runny honey
8-10 medjool dates
Preheat the oven to 180oC and line a deep baking tray with parchment paper.
Roughly chop the nuts into chunks, or add to a food processor and blitz for a few seconds.
Combine the oats and nuts in a bowl before adding the mixed seeds.
Melt the coconut oil in a microwave safe dish and add to the oat mix. Pour the honey into the mix and stir.
If the mix is slightly too dry, add a tablespoon more honey.
Pour the mix onto the baking parchment and bake for 30-40 minutes until golden.Ensure you stir the mix a few times throughout the process so the top doesn’t burn.
Whilst the granola is in the oven chop the dates into 8 pieces each.
Remove the granola from the oven and whilst warm stir in the dates.
Leave to cool and enjoy!
