Gluten & Dairy Free Oaty Banana Pancakes

Gluten & Dairy Free Oaty Banana Pancakes

The basics

Serves/Makes: 8 pancakes

Ingredients

You will need:

1 pack Delicious Alchemy Gluten & Dairy Free Oats

1 medium (approx 6-ounce) ripe banana

230ml (just under 1 cup) soy milk

1 tablespoon white vinegar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

3 tablespoons maple syrup

2 teaspoons vanilla extract

Toppings (optional): fresh berries, banana slices, maple syrup, coconut shreds, peanut butter

 

Method

Step 1

In a small bowl, add the vinegar to the almond milk, stir together and set aside for about 5 minutes.

Step 2

Then, in a blender add Delicious Alchemy Gluten and Dairy Free Oats and pulse until it resembles a flour.

Step 3

Add the remaining ingredients to the blender and blend until it forms a smooth batter mixture. Leave the batter to rest for about 5 minutes.

Step 4

Place a non-stick frying pan on a medium heat. If your pan is not non-stick, you may want to melt a little oil into the pan before cooking.

Step 5

Pour a serving of the pancake batter onto the pan (the pancakes should be around 4-5 inches in diameter). Cook for 1-2 minutes on each side until the pancakes are golden brown and cooked in the middle. If the pancakes browns too quickly before the middle is cooked, try turning down the heat a little.

Step 6

Stack and serve hot with your favourite toppings… we’ve gone for fresh blackberries, banana and maple syrup!
